Easy Chicken Enchiladas

Derek’s cousin Kathi used to make these for us when Benny was sick.  She would pre-make them as well as other stuff and bring them down to us with Aunt Carol.  It was so nice to have “go to” meals waiting for us.  They would drive here from Phoenix every few weeks.  It was so kind of them and I feel like I never thanked them enough. I encourage everyone to do that for someone they love whenever they get the chance.

For the shredded chicken, my quick and easy solution is to buy a rotisserie chicken and shred it. I used about half of the meat from one for this recipe.

For the green chili I used some that I fire grilled and froze last year.  Canned would work just as well.

So easy it’ll make you weep tears of joy.

Combine soup, chicken, sour cream, and chillies into a bowl.

Spread some in the bottom of casserole dish and start layering.

Repeat until dish is full.

I somehow missed the full shot.  But you get the picture.

Bake at 350 until the cheese is ooey gooey deliciousness.

Now feast!
