Cinnamon Chips and Fruit Salsa!

YUM!  Everyone will love you, if you make this.  I promise!

Any fruit will work.  I chose apple, strawberries and a nectarine.

Clean, core and chop.

In a decent sized bowl mix chopped fruit with 2 tablespoons of jelly, any kind.  I used raspberry preserves.

Also add 1 or 2 tablespoons of brown sugar and a dash of white sugar just for the heck of it.

Stir it all up, cover and put in fridge to marinate.

Now it’s time to make the chips.

Turn oven to 350.

Cut up tortillas.  I started doing it with a pizza cutter but quickly realized that kitchen scissors were a better choice.

I didn’t get fussy about the shape.  I assure you no one will care.

Arrange a single layer on a cookie sheet and spray with BUTTER cooking spray.

It’s hard to take pictures and cook sometimes.  Thanks Der for helping with the “action” shots.

Liberally sprinkle with cinnamon sugar.

Bake.

Don’t get impatient let them bake until they are crispy.  I didn’t time it, but I can tell you it felt like it took longer that it should. I don’t know why I had the impression they would be crispy in 5 minutes or less, but they weren’t. If you get antsy you will end up with chewy chips and nobody wants that.
